ドメーヌ・ミシュロ
Established by Bernard Michelot in the mid-20th century and achieving widespread recognition in the 1960s, Domaine Michelot manages approximately 19 hectares primarily in Meursault with additional holdings in Puligny-Montrachet and Santenay. The estate holds multiple Premier Cru parcels in Meursault—Genevrières, Charmes, Poruzots, and Perrières. Since the 1990s, Véronique Michelot and husband Jean-François Mestre took over, and now their son Nicolas leads as winemaker. Since the early 2010s, the estate has followed organic practices, receiving Ecocert certification in 2020. Vinification employs native yeasts, extended lees aging, and uses a variety of vessels including Burgundy barrels, ceramic eggs, and glass vessels to best express each terroir.

Founded by Mie Ikeno, a certified French oenologist (D.N.O.) and former journalist who studied at the University of Montpellier and worked in Burgundy before establishing her vineyard in 2007. Located in Kobuchizawa, Yamanashi, at 750m elevation on the slopes of Yatsugatake, the winery produces approximately 800 cases per year from Chardonnay, Pinot Noir, and Merlot grown without pesticides or chemical fertilizers. A gravity-flow system eliminates mechanical intervention from harvest to bottling. The vineyard 'Les Pas du Chat' (cat's footprints) was named after paw prints found during the inaugural 2006 site visit. Wines sell out immediately upon release and are considered among Japan's finest.

Domaine Mont was established in spring 2016 by Atsuo Yamanaka, who trained for two years under natural wine pioneer Takahiko Soga at Domaine Takahiko. Originally from Ibaraki Prefecture, Yamanaka came to Hokkaido as a snowboarding instructor, discovered wine while working at a resort hotel restaurant, and earned his sommelier credentials before embarking on his winemaking path. The estate's 1.5-hectare east-facing vineyard in Yoichi's Noboricho district is planted exclusively with Pinot Gris — 5,000 vines on JAS-certified organic land formerly abandoned for over 15 years. From four neighbouring farms, Yamanaka also sources Pinot Noir, Kerner, Merlot, Sauvignon Blanc, Chardonnay, and Riesling. His philosophy centres on expressing 'Japanese delicacy' in wine: wild yeast fermentation, minimal intervention, zero sulphite additions, and unfiltered bottling. Accumulated temperatures at Yoichi mirror northern Burgundy and Alsace, enabling the graceful, terroir-driven wines that have earned devoted followings in Tokyo's natural wine bars and export markets in New York, London, and Paris.

Domaine Overnoy-Houillon is one of the most legendary estates in natural winemaking. Pierre Overnoy, a visionary of the Jura, pioneered the use of zero added sulfur in his wines starting in the 1970s, long before 'natural wine' became a movement. His son-in-law Emmanuel Houillon has carried the torch since the early 2000s, maintaining the same radical non-interventionist philosophy. Based in Pupillin, a tiny village within the Arbois appellation celebrated for its exceptional limestone and clay soils, the estate produces minuscule quantities of Chardonnay (often aged en ouillé, keeping barrels full to prevent oxidation) and Poulsard (the quintessential light-bodied Jura red). These wines are among the most sought-after in the world of natural wine, frequently fetching prices far above their appellation classification.

ドメーヌ・パトリック・ジャヴィリエ
Founded when Patrick Javillier began producing under his own label in 1990 after expanding the family domaine inherited from father Raymond, who had farmed 2 hectares in Meursault since returning from World War II. Patrick's distinctive philosophy champions blending over single-vineyard dogma: he vinifies each parcel separately, then carefully assembles the final cuvées, arguing the whole exceeds the sum of its parts. The domaine is now run by daughter Marion and son-in-law Pierre-Emmanuel. Javillier is particularly celebrated for producing what several critics consider the finest Corton-Charlemagne in Burgundy, from a remarkable 0.17-hectare parcel in Les Pougets.

The Pillot family's viticultural roots reach back to the second half of the 19th century, when Jean-Baptiste Pillot chose viticulture over barrel-making. Paul Pillot took charge in 1968, acquiring prestigious premier cru vineyards including Clos Saint-Jean, Les Grandes Ruchottes, Les Caillerets, and La Grande Montagne. Today, Thierry Pillot (since 2007) leads the 13-hectare estate with a low-intervention philosophy: no herbicides, sustainable soil management, and a focus on proper grape maturity and delicate oak aging that highlights aromatic intensity and mineral identity.

One of Burgundy's most idiosyncratic and beloved producers, Domaine Robert Ampeau is famous above all for its radical philosophy of releasing wines only at full maturity—sometimes a decade or more after harvest. Robert Ampeau began in the early 20th century; his son Michel, who ran the estate until his death in 2004, maintained this tradition of extended cellar aging. With approximately 10 hectares spanning Meursault, Puligny-Montrachet, Pommard, and Auxey-Duresses, the estate follows strict organic principles. The whites are rich and full-bodied, with extraordinary freshness preserved through early picking.
