Founded in 2010 by Takahiko Soga on a hillside in Yoichi's Nobori district, Domaine Takahiko is Japan's most celebrated natural winery. Soga — the son of Nagano's Obuse Winery and a former cellar master at Coco Farm Winery — was transformed by tasting Pierre Overnoy's Poulsard from the Jura, and set out to make wines that embody Japanese 'umami.' From 6.7 hectares of organically farmed volcanic clay soils, he crafts Pinot Noir-centric wines using whole-cluster fermentation, indigenous yeasts, and zero additions — achieving a dashi-like savory depth that has earned global acclaim, including placement on Noma Copenhagen's wine list and four consecutive 5-star Japan Winery Award wins.

Domaine Y. Clerget is a historic estate in the heart of Volnay whose family has farmed the Côte de Beaune since 1268, acquiring the Clos du Verseuil Premier Cru monopole in 1936. Yvon Clerget led the domaine from 1983 until his retirement after the 2009 vintage; his son Thibaud, still completing his training, sold the family's grapes to Henri Boillot for several vintages before returning in 2015 to relaunch estate bottling at age 24 — the 28th generation to make wine here. Thibaud, who trained at Domaine Hudelot-Noellat and abroad at Domaine Drouhin (Oregon) and Giesen Estate (New Zealand), farms the roughly 10 hectares organically (uncertified) since 2018, plows all the vineyards, and has pared back intervention year by year: stopping pigeage after 2019, using partial whole-cluster fermentation, cold maceration and more restrained new oak. Holdings span Volnay Premier Crus Caillerets, Champans, Carelle sous la Chapelle and Santenots alongside the Clos du Verseuil monopole, Pommard Premier Cru Les Rugiens, parcels in Meursault, and a plot in Clos de Vougeot Grand Cru. Since Thibaud's celebrated 2015 debut vintage, the domaine has become one of Volnay's most closely watched rediscoveries.

Domaine de Courcel is one of Pommard's oldest and most distinguished estates, with a documented history dating to 1660 and unbroken ownership by the same family for over four centuries. The domaine farms roughly 10.5 hectares in Pommard, centred on its monopole Premier Cru Grand Clos des Épenots (about 5 hectares, accounting for nearly half of total production), alongside Les Rugiens, Les Frémiers, Les Croix Noires, and the village-level Les Vaumuriens. Since 1996 the cellar has been run by Yves Confuron, who uses 100% whole-cluster fermentation, cold maceration, and long élevage in French oak to craft wines that are powerful, tannic, and built for decades of aging — widely regarded among the most serious and age-worthy expressions of Pinot Noir in Burgundy.

Domaine de Montille is one of Burgundy's most celebrated natural-wine pioneers, founded by the legendary lawyer and winemaker Hubert de Montille, whose career was famously documented in the film 'Mondovino'. The domaine now encompasses 16 hectares across Volnay, Pommard, Puligny-Montrachet, Nuits-Saint-Georges, and Gevrey-Chambertin, managed by Hubert's children Étienne and Alix. The philosophy of very low yields, no chaptalisation, minimal oak, and no filtration was radical in its day and remains the domaine's hallmark. The wines are lean and austere in youth but develop extraordinary complexity with age.

Domaine de l'A is the personal estate of world-renowned Bordeaux consulting winemaker Stéphane Derenoncourt and his wife Christine, established in 1999 in the commune of Sainte-Colombe in the Castillon-Côtes de Bordeaux appellation. Derenoncourt famously said he could not consult without producing his own wine — the estate is his 'domain without limits.' The 12-hectare vineyard, planted primarily to Merlot and Cabernet Franc on deep clay and tuffeau limestone soils, is farmed with organic and biodynamic practices at very low yields (sometimes as low as 15 hl/ha). Winemaking is non-interventionist: whole-berry fermentation in open-top oak vats with a 30-day maceration, followed by malolactic fermentation in barrel, and aging in 50% new French oak. The result is a wine of exceptional purity, structure, and limestone minerality that consistently scores 92–93/100 and offers outstanding value relative to classified Bordeaux estates. Domaine de l'A has established itself as the benchmark for quality in the Castillon appellation.

Domaine de la Akeno Venus is a small, artisan winery located in Shimokamitori, Akeno-cho, Hokuto City, Yamanashi Prefecture, Japan. Founded in 2018 by Shuzo Yoshida, this boutique domaine represents one of the most compelling second-career winemaking stories in Japanese wine. Yoshida, formerly a municipal ward employee in Tokyo, began cultivating Cabernet Sauvignon in Akeno as early as 2011, dedicating years to mastering viticulture before formally obtaining his winemaking license. He studied at the Yamanashi Prefectural Agricultural and Forestry University vocational training division and honed his skills through hands-on experience at established local wineries. The Akeno district sits on the western foothills of Mt. Kaikomagatake in the Southern Alps, and it is renowned for recording over 2,600 hours of annual sunshine — among the highest in Japan. This extraordinary solar radiation, combined with low rainfall, excellent soil drainage on well-inclined slopes, cool summers, and dramatic day-to-night temperature swings, creates near-ideal conditions for producing structured, complex red wines from Bordeaux varietals. The high altitude and mountain winds further reduce disease pressure, allowing Yoshida to farm with reduced pesticide use. The winery's flagship wine, Akeno Venus Cabernet Sauvignon, is crafted entirely from estate-grown Cabernet Sauvignon harvested from the home vineyard in Akeno. After a slow, gentle fermentation in stainless steel tanks to preserve fruit purity, the wine is aged for approximately seven months in old French oak barrels, imparting subtle complexity without overwhelming the elegant fruit. The resulting wine displays a deep garnet color, layered aromas of ripe dark berries, gentle spice, and a hint of oak, with balanced tannins and refreshing acidity that make it versatile at the table — equally at home alongside steak, roast beef, sukiyaki, or grilled chicken. Shuzo Yoshida runs the domaine together with his son, blending the wisdom of a career reinvented and the energy of the next generation. Their shared commitment to quality and terroir expression has earned Domaine de la Akeno Venus recognition in the Japan Winery Award (JWA) 2025, receiving a Connoisseurs Award — a testament to the quality emerging from this sun-drenched corner of Yamanashi.
