ドメーヌ・ジャック・カリヨン
Domaine Jacques Carillon was established in 2010 when Jacques and his brother François divided the historic Louis Carillon estate. Jacques farms 5.25 hectares with his wife Sylvia, continuing a Carillon family winemaking tradition in Puligny-Montrachet documented since 1520. His style is more tensile and understated than his brother's — prioritizing vertical structure, razor-sharp acidity, and classic Burgundian restraint over opulence.

Domaine Jean Chartron has deep roots in Puligny-Montrachet history: the estate's ancestor Jean-Edouard Dupard was the Mayor of Puligny who, in 1873, successfully petitioned for the village to be renamed Puligny-Montrachet in honor of its greatest Grand Cru. Founded in 1859, the domaine is now led by Jean-Michel Chartron (fifth generation) across 14 hectares, with Grand Cru holdings in Bâtard-Montrachet and Chevalier-Montrachet, and the prestigious monopole Premier Cru Clos de la Pucelle.

The domaine traces its winemaking lineage to at least the early 18th century. Jean-Noël Gagnard (born 1926) built its modern reputation, before passing the reins to his daughter Caroline Lestimé in 1989. The 12.5-hectare estate has been certified organic since 2014 and is farmed with biodynamic principles. Caroline produces ten different white premier cru Chassagnes, three village-level Chassagnes, and five red wines across Chassagne, Santenay, and Hautes-Côtes de Beaune. The whites are aged in 30% new oak and reward patience — apparently restrained in youth, they blossom with bottle age.

Domaine Joseph Voillot is a family estate in Volnay with deep roots in the village, now managed by Jean-Pierre Charlot (son-in-law of Joseph Voillot) and increasingly by the next generation. The domaine holds approximately 11 hectares across Volnay, Pommard, and Meursault, with particular strength in Volnay Premier Crus Champans, Clos des Chênes, and Fremiets, as well as Pommard Pézerolles and Rugiens. The winemaking is traditional yet thoughtful — old vines, low yields, moderate oak — producing wines of real substance and terroir authenticity at accessible prices relative to appellation standards.

A 17-hectare family estate in Santenay run by Justin Girardin, the 13th generation of a winemaking family established in Burgundy since 1570. Justin took over from his father Jacques in 2012 and has rapidly gained recognition for precise, minimally interventionist winemaking. The domaine spans Santenay (village and premier cru), Savigny-lès-Beaune, and Bourgogne appellations, with the Santenay Vieilles Vignes (50-year-old vines, multiple parcels) as its entry-level flagship.

Domaine KOSEI is a single-varietal Merlot winery established by Kosei Ajimura in the Kataoka district of Shiojiri City, Nagano Prefecture, within the Kikyogahara Wine Valley. Ajimura, born in 1957 in Iwakuni, Yamaguchi, graduated from Yamanashi University Graduate School in 1983 and joined Mercian (then Sanraku Ocean). After studying at the University of Bordeaux in France, he served for many years as the chief winemaker at the Katsunuma Winery where he also co-developed the acclaimed "Chateau Mercian Kikyogahara Merlot". Upon early retirement, he established Domaine KOSEI, began grape cultivation in 2016, and completed the winery in 2019. The winery cultivates only Merlot in the Kataoka district at approximately 700 meters altitude, in well-drained, moisture-retaining soil on former mulberry fields. All wines are bottled without fining, cold stabilisation, filtration, or heat treatment. The vineyards are planted with roses at their borders — roses being more susceptible to disease than vines, they serve as an early warning system for vineyard health. The inaugural red wine, "Kataoka Merlot 2019", received the Grand Gold at the Bordeaux Wine Challenge, validating Ajimura's pursuit of world-class Merlot in Shiojiri.

Domaine Leflaive is the undisputed reference point for white Burgundy. Founded by Joseph Leflaive in the early 20th century, the domaine gained worldwide renown under Anne-Claude Leflaive, who became one of Burgundy's most vocal advocates for biodynamic viticulture and completed a full conversion by 1996. Today, Brice de La Morandière — fourth generation — leads the estate across 42 hectares including Grand Cru holdings in Montrachet, Chevalier-Montrachet, Bâtard-Montrachet, and Bienvenues-Bâtard-Montrachet.

Domaine Lejeune is one of Pommard's most authentic and under-appreciated family estates, with a long history in the village. The domaine holds important parcels in Pommard's finest Premier Crus, including Rugiens-Bas — widely considered the greatest vineyard in the appellation. The wines are made in a traditional style with minimal technology, producing Pommard of genuine character: powerful, earthy, deeply coloured, with the iron-mineral austerity that Rugiens is famous for. Production is small, and the wines are prized by those who seek authentic Pommard at fair prices.

The domaine is known for its premier cru sites La Maladière (4.35ha, 60-year-old vines) and Clos de Tavannes, as well as a growing range from Chassagne-Montrachet. Whole-cluster fermentation is used for much of the red wine production.

Founded in Saint-Aubin in 1970 by Marc Colin, the estate started with approximately 6 hectares in Chassagne-Montrachet and Saint-Aubin, expanding significantly through the 1980s and 1990s. Today, Damien and Caroline Colin manage 11.5 hectares following the independent departures of brothers Pierre-Yves (PYCM, 2005) and Joseph Colin (2017). The domaine produces 24 appellations from Bourgogne Aligoté to Le Montrachet grand cru, with Saint-Aubin at the heart of the portfolio. Harvests are by hand, viticulture is sustainable (lutte raisonnée), and the wines are aged in oak barrel. Some vines trace their family history back over a century.

Domaine Marquis d'Angerville is Volnay's most iconic estate, founded in the early 20th century and synonymous with the appellation's finest expression. The domaine is the exclusive owner of Clos des Ducs, Volnay's only monopole Premier Cru. The late Marquis Jacques d'Angerville was a pioneering advocate for domaine bottling in Burgundy during the 1930s, fighting against négociant fraud. Today Guillaume d'Angerville continues the estate's tradition of precise, elegant, terroir-faithful winemaking with minimal intervention. The domaine farms around 15 hectares in Volnay, Pommard, Meursault, and Champagne Fourchaume.

A six-generation family estate with roots in the mid-19th century, Domaine Matrot is today run by sisters Adèle and Elsa Matrot from their historic base in Meursault. The domaine spans over 20 hectares, with the bulk in Meursault's Premier Crus—Charmes, Blagny, and Perrières—plus excellent holdings in Puligny-Montrachet (Combettes, Chalumeaux) and Blagny. Since 2000, the vineyards have been farmed organically, and the winery employs indigenous yeast fermentation, extended lees aging in neutral oak, and rigorous barrel hygiene. The unique Blagny appellation, shared between Meursault and Puligny-Montrachet, is where Matrot excels in a distinctive, almost Puligny-like mineral style.

Domaine Michel Lafarge is one of Volnay's most revered and historic estates, with roots in the village stretching back generations. The late Michel Lafarge was a trailblazer of biodynamic viticulture in Burgundy, converting the domaine to full biodynamics in 2000. His son Frédéric now runs the 10-hectare estate with the same devotion to minimal intervention and living soils. The domaine's vineyards include some of Volnay's finest parcels: Clos des Chênes, Clos du Château des Ducs, and Vendanges Sélectionnées. Lafarge wines are celebrated for their purity, depth, and remarkable consistency across vintages.

A Chassagne-Montrachet institution founded in the 19th century by Léon Niellon. Michel Niellon began working with his father Marcel in the 1950s, and the family began domaine-bottling in the 1960s, quickly establishing their four-hectare estate as among the village's finest. Since 1991, Michel has shared duties with his son-in-law Michel Coutoux, and grandson Mathieu Bresson has joined in recent years. The domaine practices sustainable viticulture (lutte raisonnée), hand-harvests, and ferments with natural yeasts, combining tradition with careful modernity. Niellon's Chevalier-Montrachet and Chassagne premier crus are especially sought after.
