Sourced from 11-16 year old vines on north-facing hillside blocks planted on 110-million-year-old decomposed granite topped with iron-rich red clay. Hand-harvested grapes undergo whole-cluster then individual berry selection, followed by cold soak and a 7-day maceration in small stainless steel tanks. Deep ruby-purple in color, with intense blackberry, blueberry and black pepper aromas layered with violet, black olive and smoked bacon.

Hand-picked at the end of May from north-facing hillside vines (11-16 years old) on decomposed granite with iron-rich red clay topsoil. Double berry selection (whole cluster then individual berry), cold soak, and fermentation at controlled temperature with 7-day maceration in small stainless steel tanks. Aged 12 months in French oak (60% new, 40% second-fill), plus 3 months in bottle before release.
