Casas del Bosque

Sauvignon Blanc

About this wine

Sourced from the Las Dichas block at the cool, foggy westernmost end of the Casablanca Valley, this Sauvignon Blanc blends three clones (66% Clone 1, 19% Clone 242, 15% Clone 107) from vines 7-16 years old, grown on clay loam (73%) and sandy-clay (27%) soils. Aromas of citrus, boxwood and white flowers meet Casablanca's signature jalapeño note, with passion fruit, grapefruit, melon, black tea and anise on a dry, crisp, high-acid palate.

Beginner's Note

A textbook cool-climate Sauvignon Blanc—zesty, citrusy, and easy to love from the first sip.

Sommelier's Note

"The wine that put Casablanca Valley Sauvignon Blanc on the map for everyday drinking—reliably crisp, vintage after vintage."

Food Pairings

A classic match for oysters, ceviche, and goat cheese salads; the jalapeño-inflected acidity also cuts through fried calamari and green herb sauces.

When to drink it

Everyday aperitif, seafood lunches, casual gatherings.

Terroir & Winemaking

Hand-selected fruit from three Sauvignon Blanc clones (66% Clone 1, 19% Clone 242, 15% Clone 107) planted 7-16 years ago in Las Dichas, the westernmost block of Casablanca Valley, on clay loam (73%) and sandy-clay (27%) soils. Grapes are machine-harvested at night, given a short 6-8 hour skin contact in the press, and only the free-run juice (~60% of the yield) is used. Cold-settled 1-5 days, then fermented in stainless steel with selected yeasts at 12-18°C.
