What is Didier Barral's winemaking philosophy?
Didier Barral, a thirteenth-generation winegrower, believes the wine is almost finished once the grapes leave the vineyard. He ferments each parcel separately as whole clusters with indigenous yeasts, uses long macerations with manual punch-downs, and adds no sulfur.
What makes the estate's farming unique?
Since founding the domaine in the early 1990s (named after his grandfather Léon), Barral has raised more than 100 cows, horses, pigs, and other animals that graze the vineyards each winter, naturally fertilizing the soil and encouraging earthworm activity that lets rainwater penetrate deep into the schist bedrock.
