ドメーヌ・ディディエ・ダグノー
Domaine Didier Dagueneau is Pouilly-Fumé's most celebrated estate, founded in 1982 by the visionary and iconoclastic winemaker Didier Dagueneau. Driven by an obsessive quest to make 'the world's best Sauvignon Blanc,' he pioneered biodynamic viticulture, ultra-low yields, horse-plowed parcels, and Burgundy-inspired barrel fermentation at a time when none of this was practiced in the Loire. After his death in a 2008 ultralight plane crash, his children, Louis-Benjamin and Charlotte Dagueneau, took over the domaine and have faithfully upheld his uncompromising standards. Single-vineyard cuvées such as Silex, Pur Sang, Buisson Renard, and the ungrafted-vine Astéroïde remain the benchmark for the appellation, prized for their precision, mineral intensity, and remarkable ageing potential.

A small, quality-focused family estate in Aloxe-Corton, taken over by geologist Franck Follin-Arbelet in 1993 from his uncle André. The domaine farms one village wine, four premier crus, and four grand crus across Aloxe-Corton, Pernand-Vergelesses, and Vosne-Romanée. Franck's geological expertise informs a minimalist winemaking approach: fully destemmed, fermented in wooden vats, 18 months in barrel with 20–25% new oak. His son Simon joined in 2017.

Founded in 1985 by Richard Fontaine and his wife Laurence Gagnard (eldest daughter of Jacques Gagnard of Domaine Gagnard-Delagrange), the estate draws its 12 hectares primarily from the Gagnard family heritage. Now led by their daughter Céline Fontaine since 2007, joined by partner Fred Robert (formerly of Rousseau 2006–2017), the domaine produces wines from three grand crus and twelve premier crus in Chassagne. Winemaking is strictly traditional: natural yeast fermentation, 12–18 months in barrel, with minimal intervention to honor each terroir's individual character.

Domaine François Carillon was created in 2010 when brothers François and Jacques divided the historic Louis Carillon estate, tracing its roots to Jean Carillon, a vintner in Puligny as early as 1520. François inherited the family's 16-hectare estate with Premier Cru sites in Les Perrières, Combettes, Folatières, and Champ Gain, as well as the Grand Cru Chevalier-Montrachet. His winemaking philosophy prioritizes precision and balance over power, with minimal new oak (never exceeding 15%).

Founded in 1974 when pharmacists Charles-Henri Génot and his wife Marie née Boulanger left Paris to pursue their viticultural dream in Meursault, the domaine has grown under their grandson-in-law Guillaume Delaby and wife Aude (daughter of François Delaby, who inherited in 1998) to 22 hectares spanning 30+ appellations across all three Burgundy côtes. Since 2008, Guillaume and Aude have converted to organic farming (AB certified since 2018) and experimented with biodynamics. The philosophy is 'maximum work in the vineyards for minimum intervention in the cuverie'—whole cluster pressing for whites, native yeast fermentation in barrel (20–30% new oak), no lees stirring, 18 months élevage. With 80% white wine production plus reds from Volnay, Pommard, and Beaune, Génot-Boulanger offers Burgundy's most diverse certified organic portfolio.
