Mimas

ミマス

Candialle

Sangiovese

About this wine

A 100% Sangiovese Toscana IGT aged not in oak but in spherical ceramic amphorae called Clayver, made by a small producer near Genoa. Fired at nearly twice the temperature of terracotta, Clayver vessels are essentially neutral and allow only about one-tenth the oxygen transmission of a barrel. Mimas is released as IGT rather than Chianti Classico simply because the volume is too small to go through the DOCG tasting panel.

Beginner's Note

A great, low-risk way to taste what amphora aging does to wine — pure fruit with zero oak influence.

Sommelier's Note

"One of the world's first commercially released wines aged in Clayver ceramic amphorae — pure Sangiovese, completely unmasked by wood."

Food Pairings

Light Tuscan charcuterie, tomato-based pastas, and simply grilled fish.

When to drink it

Natural-wine tastings, curious wine-geek dinners.

Frequently Asked Questions

Why is Mimas labeled IGT instead of Chianti Classico?
The volume produced is too small to be submitted through the Chianti Classico DOCG tasting panels, so it is released under the broader Toscana IGT designation.
What is a Clayver?
A spherical ceramic amphora made by a small producer near Genoa, fired at very high temperature so it is essentially neutral and allows minimal oxygen exchange, unlike oak barrels.
Does Mimas taste oaky?
No — because it ages in ceramic rather than wood, it shows pure, unoaked Sangiovese fruit character.
