Fired at nearly twice the temperature of terracotta, Clayver vessels are essentially neutral and allow only about one-tenth the oxygen transmission of a barrel. Mimas is released as IGT rather than Chianti Classico simply because the volume is too small to go through the DOCG tasting panel.
