Candialle's estate Chianti Classico annata and entry point into the range. Roughly 94% Sangiovese, 3% Malvasia Nera and 3% Canaiolo are co-harvested and co-fermented together in unlined concrete, with macerations lasting about a month, then aged in concrete vats. The method preserves pure fruit and the wine's natural florality rather than layering on oak.

Candialle's flagship Riserva, 100% Sangiovese from organically farmed, hand-harvested vines yielding as low as 35 hl/ha. Fermented in open-top stainless steel with malolactic conversion in barrel, then aged 18 months in 228-350L barrels (about 20% new oak). Dark cherry, plum, mocha, leather and licorice build into a brawny, imposing structure.

A 100% Sangiovese Toscana IGT aged not in oak but in spherical ceramic amphorae called Clayver, made by a small producer near Genoa. Fired at nearly twice the temperature of terracotta, Clayver vessels are essentially neutral and allow only about one-tenth the oxygen transmission of a barrel. Mimas is released as IGT rather than Chianti Classico simply because the volume is too small to go through the DOCG tasting panel.
