Domaine de Montille

ドメーヌ・ド・モンティーユ

Pioneer of low-yield, no-chaptalisation, no-filtration Burgundy; Hubert de Montille's radical philosophy now defines what 'natural Burgundy' means across the world.

Domaine de Montille is one of Burgundy's most celebrated natural-wine pioneers, founded by the legendary lawyer and winemaker Hubert de Montille, whose career was famously documented in the film 'Mondovino'. The domaine now encompasses 16 hectares across Volnay, Pommard, Puligny-Montrachet, Nuits-Saint-Georges, and Gevrey-Chambertin, managed by Hubert's children Étienne and Alix. The philosophy of very low yields, no chaptalisation, minimal oak, and no filtration was radical in its day and remains the domaine's hallmark. The wines are lean and austere in youth but develop extraordinary complexity with age.

Frequently Asked Questions

What is the de Montille philosophy on new oak?
Hubert de Montille famously disliked new oak and kept it extremely low — often under 10–15% — to allow the terroir rather than the barrel to define the wine. This approach is maintained today.
Who runs the domaine now?
Étienne de Montille (red wines and business) and Alix de Montille (now at her own project) have continued Hubert's legacy since his passing in 2014. Étienne has expanded to several additional appellations.
What are de Montille's most sought-after Volnay wines?
The Volnay Premier Crus Taillepieds, Champans, and Mitans are considered the domaine's Volnay crown jewels, with Taillepieds generally regarded as the pinnacle.
