Ambellacy White is the white-wine half of Tsuno Wine's Ambellacy series — the winery's first-ever assemblage (multi-varietal blend) wines, launched in July 2022. Contrary to a common misconception, Ambellacy is explicitly NOT a premium or prestige line: Tsuno Wine's own press materials describe it as a casual, everyday-table series meant to accompany ordinary meals, not a special-occasion bottling. The name comes from the Tsuno-dialect word 'ambellashii,' meaning 'well-balanced,' 'just right,' and 'new.' Grapes are sourced from the winery's own Osuzu Vineyard plateau in Tsuno Town, Miyazaki, and the blend recipe changes every year, so each vintage is a one-time expression. At launch (2022) the blend was Sauvignon Blanc 35% / Trebbiano 34% / Pinot Gris 22% / Albariño 9%; the current release on Tsuno Wine's own online shop is Trebbiano 50% / Pinot Gris 30% / Sauvignon Blanc 20%, fermented and matured in stainless steel tanks (no oak). It shows a clear, pale lemon-yellow colour with faint green tints; the nose opens with pear, pineapple and green banana against a sweeter peach-like top note, moving to citrus (natsu-mikan, grapefruit) and mineral/herbal green notes on swirling; the palate is dry with firm acidity and pleasant bitterness, smooth texture and a long finish.

Don't mistake Ambellacy for a prestige bottling — Tsuno Wine designed it as an everyday assemblage, and that's exactly its strength: it over-delivers aromatic complexity (pear, pineapple, citrus) for a wine meant for casual weeknight drinking.

The wine's acidity and pleasant bitterness make it a natural match for raw oysters and fried oysters (kaki furai) — described by Tsuno Wine itself as a 'bon mariage.'
