Hoshi Kage ("starlight") is a red natural wine from MORIUMIUS Farm & Winery, a Tohoku wine project rebuilding a tsunami-hit district of Ishinomaki, Miyagi through a renovated schoolhouse. Grapes — a blend of the Japanese hybrid Hokushu (32%) with Pinot Noir (30%), Merlot (29%) and Cabernet Sauvignon (9%) — are harvested from contract growers in Takahata, Nan'yo and Kaminoyama in neighboring Yamagata Prefecture, then vinified in Kawasaki Town, Miyagi at Fattoria AL FIORE using only wild yeast, with no added sulfites and no filtration. The wine shows a deep, translucent ruby color, aromas of red berries, black cassis, plum and warm cinnamon-like spice, and a medium-bodied palate with present tannins, bright acidity and a concentrated yet elegant, lengthening finish that gains complexity with air.
A rare Miyagi red built around the native hybrid Hokushu blended with classic Bordeaux and Burgundy varieties — proof that Tohoku's post-disaster wine revival can produce something genuinely complex and food-friendly, not just sentimental.

Bagna càuda, caprese salad, and balsamic- or soy-based sauces work well too. Best served at 14-16°C.
