Hana Akari ("flower light") is a rosé sparkling wine from MORIUMIUS Farm & Winery, made from Steuben (78%) and Neo Muscat (22%) grapes grown in Nan'yo, Yamagata Prefecture, and vinified at Fattoria AL FIORE in Kawasaki Town, Miyagi. Destemmed Steuben grapes are macerated on their skins for roughly 16 days to develop a vivid ruby color, while the Neo Muscat is pressed directly for its aromatic juice; the two are then blended and fermented with wild yeast, unfiltered and without added sulfites. The result shows fine, delicate bubbles, notes of grapefruit and pomelo, herbal lemongrass, strawberry, red cherry and peach, with balanced acidity and a subtle mineral edge. Hana Akari is a distinct cuvée from its sister wine Hana Goyomi (a still rosé of Muscat Bailey A 28% / Neo Muscat 72%) — Hana Akari is the sparkling rosé built primarily on Steuben.
Hana Akari proves that Steuben — usually relegated to juice and jam in Japan — can make a genuinely elegant sparkling rosé when handled with care; its extended skin contact gives it more depth than most Japanese sparkling rosés at this price.
