AyaTopia is Katsuki Wines' signature natural white wine, a field blend of Portland, Kyoho, and Niagara grapes grown pesticide-free by hand in Aya, Miyazaki — the flagship cuvée that put this Kyushu winery on the map. Fermented with wild yeast and bottled unfiltered, it shows pale straw-yellow color with aromas of yellow apple, citrus, quince, and melon-family fruit. The palate is smooth and juicy, reminiscent of biting into fresh table grapes, with a refreshing finish of lychee and late-season citrus. Natural sediment settles at the bottom of the bottle; store upright and chill before serving.

Wild-yeast fermentation with no fining or filtration, so natural sediment may settle in the bottle. 10% ABV, bottled at 750ml. Blend ratios shift slightly by vintage (e.g. the 2025 release is roughly Portland 44% / Kyoho 30% / Niagara 26%, while the 2024 release is roughly Niagara 43% / Portland 30% / Kyoho 27%).
