Grapes are fully destemmed and pressed in a basket press, then fermented with wild yeast at low temperature for about three weeks before resting in stainless steel tank with two gravity rackings prior to bottling — no fining, no filtration, no added sulfites. The nose shows apricot, pear, and apple fruit with a fermentation-derived note of banana; the palate carries a gentle bitterness and a lingering, well-balanced finish. It is a smaller-production sibling to the winery's flagship AyaTopia, made from a different grape mix centered on Chardonnay rather than table-grape varieties, grown on Katsuki's pesticide-free plot in Aya, Miyazaki.
