Katsuki Wines is a boutique, family-run winery in Aya, Miyazaki — a Kyushu town registered as a UNESCO Biosphere Reserve for its town-wide commitment to organic farming. Founder Yoshitada Katsuki trained for a decade in New Zealand's Marlborough region and at a family-run winery in Germany before returning home in 2013 to begin pesticide-free viticulture on inherited land, officially founding the winery in 2017. Defying skepticism that Kyushu's hot, humid, high-rainfall climate could ever support quality winemaking, Katsuki now hand-farms roughly 40 grape varieties — from Chardonnay and Merlot to native and hybrid vines — without chemical fertilizers, pesticides, or herbicides, fermenting with wild yeast and bottling without filtration.
