Made using the traditional Tuscan 'governo' method, a portion of the Sangiovese grapes are partially dried before a secondary fermentation is triggered in the finished wine, adding roundness and a touch of appassimento-like richness. The result is a fruitier, softer Chianti DOCG with blackberry and forest-berry aromatics, hints of violet and balsamic, and well-balanced, approachable tannins at around 13.5% ABV.
The governo method gives this Chianti a fruit-forward roundness that plain stainless-steel Chianti rarely achieves.
