About this wine

Occhio di Pernice ('eye of the partridge') is Bindella's rare red-grape Vin Santo, made from Sangiovese grapes dried after harvest (appassimento) to concentrate sugars, then fermented and aged for years in small oak caratelli. It shows a deep amber-red color with complex aromas of dried figs, roasted nuts, honey, and spice, and a velvety, luscious texture.
