The grapes undergo skin-contact (maceration) fermentation before bottling via the ancestral method (méthode ancestrale), trapping the natural carbonation produced by the yeast still at work. The result balances Delaware's signature bright, sweet floral aroma with crisp acidity and a pleasant, subtle tannic grip from the skin contact. The grapes undergo skin contact to extract flavor and color before fermenting into a naturally sparkling wine using the ancestral method (pétillant naturel), with in-bottle secondary fermentation. It is bottled unfiltered with its natural lees, giving drinkers the option to enjoy the clear top layer first, then mix in the lees as the glass empties to experience an evolving texture and flavor. Expect crisp green apple and citrus aromas with vibrant, cutting acidity. Around 9% ABV, 750ml bottle.

Collection Vin Pétillant Delaware Blanc is Bellwood Vineyard's signature bottle-fermented pétillant naturel, made from 100% seeded Delaware grapes grown in the Kubote district of Kaminoyama City and the neighboring Motozawa district of Yamagata City. The must is bottled while fermentation is still underway, trapping the wine's own CO2 and fine lees with no dosage or disgorgement. Unfiltered and unfined, it pours cloudy with a gentle, creamy mousse, showing bright apple and La France (nashi pear) aromatics over a bone-dry, refreshingly acidic frame. Released annually as a new-vintage bottling from that year's Delaware harvest.
