About this wine
Collection Vin Pétillant Delaware Blanc is Bellwood Vineyard's signature bottle-fermented pétillant naturel, made from 100% seeded Delaware grapes grown in the Kubote district of Kaminoyama City and the neighboring Motozawa district of Yamagata City. The must is bottled while fermentation is still underway, trapping the wine's own CO2 and fine lees with no dosage or disgorgement. Unfiltered and unfined, it pours cloudy with a gentle, creamy mousse, showing bright apple and La France (nashi pear) aromatics over a bone-dry, refreshingly acidic frame. Released annually as a new-vintage bottling from that year's Delaware harvest.
A friendly introduction to Japanese pét-nat — start by pouring the clear top layer, then gently swirl in the lees for a richer, evolving second pour.
Sommelier's Note
"One of the most honest expressions of seeded Delaware in Japan — Bellwood's bottle-fermented pét-nat captures crisp apple and La France pear aromatics with a bone-dry, cleansing finish that only deepens as you work through the lees."
Food Pairings
A versatile food wine: excellent with tempura, sweet-vinegar glazed fried chicken (karaage), soy-and-mirin simmered dishes, and butter-forward preparations such as sole meunière or chicken in butter sauce. Its bright acidity and gentle bubbles also make it a natural fit for casual BBQs and izakaya-style spreads.
When to drink it
Casual gatherings, BBQs, izakaya-style spreads, and as a refreshing aperitif.

Terroir & Winemaking
100% seeded (grafted) Delaware grapes from Kaminoyama's Kubote district and the adjacent Motozawa district, Yamagata. Produced by the méthode ancestrale (pétillant naturel): must is bottled mid-fermentation with no added sugar or cultured yeast, trapping naturally produced CO2 and fine lees. Unfiltered, unfined, no disgorgement — the wine is cloudy and evolves in character as the lees are mixed in while pouring. Dry style, approx. 12% ABV.

Bellwood Vineyard Collection Vin Pétillant Verdelet
SparklingVerdelet
A dry pétillant from Bellwood Vineyard in Kaminoyama, Yamagata, made from Verdelet (Seibel 9110) grapes grown in the Kubote/Hosoya district on the city's west side, at roughly 250m elevation on stone-mixed clay soil. The grapes undergo skin contact to extract flavor and color before fermenting into a naturally sparkling wine using the ancestral method (pétillant naturel), with in-bottle secondary fermentation. It is bottled unfiltered with its natural lees, giving drinkers the option to enjoy the clear top layer first, then mix in the lees as the glass empties to experience an evolving texture and flavor. Expect crisp green apple and citrus aromas with vibrant, cutting acidity. Around 9% ABV, 750ml bottle.

Collection Vin Pétillant Delaware Orange
orangeSparklingDelaware
A dry, orange-style pétillant naturel crafted from 100% seeded Delaware grapes grown in the Motosawa district of Yamagata City, Yamagata Prefecture, and vinified by Bellwood Vineyard in nearby Kaminoyama. The grapes undergo skin-contact (maceration) fermentation before bottling via the ancestral method (méthode ancestrale), trapping the natural carbonation produced by the yeast still at work. The result balances Delaware's signature bright, sweet floral aroma with crisp acidity and a pleasant, subtle tannic grip from the skin contact. Unfiltered, the wine carries natural sediment that shifts the texture and flavor as the bottle is poured out, from a clear, delicate first pour to a richer, more textured finish.
