Montefioralle's top-tier wine, first produced with the 2013 vintage, is a monovarietal Sangiovese Gran Selezione made from grapes hand-selected from the estate's best vineyard plots at around 400 meters elevation on the southern slopes below Montefioralle village. It ferments in steel and matures 24-30 months in used oak, followed by 18 months of bottle aging before release. Production is extremely limited — around 600 bottles per year — and the wine is reserved for members of the estate's wine club.

Monteficalle is Montefioralle's Super Tuscan-style IGT Toscana, born from an idea Fernando Sieni had in the 1980s to work with international grape varieties alongside the estate's Sangiovese. Named after the ancient name of Montefioralle village ('Monteficalle', or 'Mountain of Figs'), the current blend is 50% Cabernet Sauvignon and 50% Merlot, sourced from plots more than 30 years old and matured 24 months in small used oak barrels. Because it relies on international varieties rather than Sangiovese, it falls outside the Chianti Classico DOCG and is classified as IGT Toscana.

Montefioralle's Vin Santo del Chianti Classico DOC is a traditional Tuscan dessert wine made entirely from white grapes — Malvasia and Trebbiano. After harvest, the grape bunches are hung to dry on wood canes in ventilated rooms for a couple of months (the appassimento method), concentrating their sugars. The dried grapes are then pressed and the must is transferred to small wooden barrels called 'caratelli', where it ferments and ages for around three years before bottling.

Il Guerrino is an extremely limited, single-release Chianti Classico from Montefioralle, made with the 2022 vintage from the last harvest of a Sangiovese vineyard planted in the late 1930s before the plot was replanted. Less than five quintals of grapes from this nearly 80-year-old vineyard were vinified separately to preserve a piece of the estate's agricultural history, resulting in just 300 bottles, sold exclusively to members of Montefioralle's wine club.
