Grown on the eastern slope of the Ausario hill (planted in 1995) on clay soil at medium hillside altitude, this cool-exposure Chardonnay shows body, savouriness, minerality and good acidity, with elegant aromas complexed by short ageing in barriques and tonneaux.
Sofia shows what the Ausario hillside can do for a white grape — the same cool, mineral-driven exposure that shapes Molino's benchmark Barbaresco.
New to wine?
A gentle introduction to oak-aged Chardonnay — creamy but balanced by fresh acidity rather than heavy on wood.
Food Pairings
Pairs well with creamy pasta, grilled white fish, and soft cheeses; also complements butter-based Japanese dishes like ebi fry or cream croquettes.
When to drink it
Dinner parties, pairing with creamy or buttery dishes, warm-weather whites
