Field of Dreams Winery was established in 2021 through the M&A acquisition of a 20-year-old fruit farm in Yoichi's Nobori district, Hokkaido. Spanning approximately 6 hectares of gently sloping terrain, the estate cultivates Pinot Noir, Zweigelt, Chardonnay, Kerner, Sauvignon Blanc, and Müller-Thurgau using exclusively natural fertilizers with zero herbicides. Working in collaboration with legendary winemaker Takahiko Soga of Domaine Takahiko, the team pursues minimal-intervention winemaking — wild yeast fermentation, negligible sulfite addition — to encapsulate the living vitality of Yoichi's volcanic soil in every bottle. Plans are underway for a winery hotel and restaurant (LOOP) to open in 2027.

Founded in 2005 by Lorenzo Fonzone Caccese — a former hand surgeon turned winegrower — Fonzone is a family estate in Paternopoli, at the heart of the Taurasi DOCG zone in Irpinia, Campania. Now guided by the next generation, the winery farms roughly 30 hectares of Aglianico, Fiano, Greco di Tufo and Falanghina using organic, biodiversity-focused viticulture — no herbicides, only organic amendments and pollinator hedgerows. Funakoshi Winery (船越ワイナリー) is a pioneering Japanese winery established in 2020 in the Funakoshi district of Tako-machi, Katori-gun, Chiba Prefecture — the first new winery to open in Chiba in 90 years. Founded by local rice farmers as a community revitalization initiative, the winery is led by CEO Junichi Katsumata and driven by a mission to craft delicious, body-friendly wine that the town of Tako can be proud of on the world stage. The winery produces wines under the label 'Tako Wine' (多古ワイン), sourcing grapes primarily from Ibaraki Prefecture (Muscat Bailey A), and also from Iwate, Yamagata, and Yamanashi, while working toward growing its own grapes in Tako by 2024 — cultivating Yamasouvignon (ヤマソービニヨン), a yamabudo hybrid, on a vineyard with over 50 years of grape cultivation history. Winemaking is handled by Natsumi Tobari, who trained under winemaker Shiose at Le Milieu in Nagano. The house style is low-intervention and natural: the signature technique is 'kamoshi fermentation' (かもし発酵), a skin-contact whole-cluster fermentation that extracts maximum character from the fruit. Sulfites are kept minimal — only 30 ppm at the beginning of fermentation, with zero added at bottling — resulting in wines that are fresh, spicy, and food-friendly. Product lines include 'VineSpace' (an introductory red from Muscat Bailey A) and 'Goodness' (a pétillant naturel-style rosé from Ibaraki Muscat Bailey A). Funakoshi Winery received recognition at the Japan Winery Award (JWA) 2025, earning a Connoisseurs Award — a distinction awarded to emerging wineries capturing the attention of wine professionals. The winery also collaborates with Hotel New Otani Makuhari, one of Chiba's landmark hotels, placing Tako Wine on the menus of Tokyo-area fine dining establishments.

Located in Cerè di Negrar within the Valpolicella Classico zone, Giuseppe Quintarelli is widely regarded as the 'Maestro del Veneto.' Founded in 1924 by Silvio Quintarelli, the estate was transformed over six decades by his son Giuseppe 'Bepi' Quintarelli (1927-2012) into the definitive benchmark for Amarone della Valpolicella. Giuseppe Rinaldi, universally known as 'Beppe,' was one of the last and most uncompromising defenders of traditional Barolo. Inheriting the estate from his father Battista, Beppe carried on a winemaking philosophy rooted in patience, integrity, and deep respect for Nebbiolo. He remained fiercely opposed to the modernist movement of the 1980s, which sought to tame Barolo with shorter macerations and French oak barriques. Alongside Bartolo Mascarello, he became a symbol of traditionalist resistance. His wines are crafted through spontaneous fermentation with indigenous yeasts, long skin contact, and aging in large old Slavonian oak casks (botti) — with no filtration, no fining, no shortcuts. Since his passing, his daughter Marta has continued the estate's uncompromising mission with equal dedication.
