Grapes are destemmed and crushed, then undergo 80 days of cold skin maceration with minimal stirring, preserving deep fruitiness while avoiding harsh tannins. Bottled using the pét-nat (pétillant naturel) method with active wild yeasts for natural bottle secondary fermentation. Zero added sulfites, unfiltered and unfined. Approximately 10% ABV. Due to high gas pressure, chill thoroughly and open slowly.
