Rosario Bianco, Niagara, and Shine Muscat undergo extended low-temperature skin-contact maceration (approximately 90 days, with only 2–3 punch-downs) to gently extract aromas and light tannins. Delaware is vinified as white wine (without skin contact) to preserve its bright, fresh fruitiness. Fermented with indigenous wild yeasts; no chaptalization, no acid adjustment. Bottled unfined, unfiltered, and with zero added sulfites (SO2). A slight natural spritz may be present due to in-bottle fermentation.
