Rosario Bianco, Niagara, and Shine Muscat undergo low-temperature skin-contact fermentation (醸し) for approximately 90 days, while Delaware — grown pesticide-free at the winery's own vineyard — is vinified as white wine to preserve its bright, crisp fruitiness. The result is an elegant orange wine defined by aromatic muscat and white peach notes from Rosario Bianco and Shine Muscat, lively acidity from Niagara and Delaware, and a light, refreshing body.

Terroir & Winemaking

Produced using 100% Yamagata-grown grapes. Rosario Bianco, Niagara, and Shine Muscat undergo extended low-temperature skin-contact maceration (approximately 90 days, with only 2–3 punch-downs) to gently extract aromas and light tannins. Delaware is vinified as white wine (without skin contact) to preserve its bright, fresh fruitiness. Fermented with indigenous wild yeasts; no chaptalization, no acid adjustment. Bottled unfined, unfiltered, and with zero added sulfites (SO2). A slight natural spritz may be present due to in-bottle fermentation.
