About this wine

Acid Techno by Yellow Magic Winery is an innovative Japanese orange wine made from 100% Delaware grapes grown without any pesticides at the Kanayama vineyard in Nanyo City, Yamagata. Named after 'Acid Techno' music and 'Ashi' (foot-treading), the grapes are vinified whole-cluster using foot-treading and undergo 40 to 120 days of semi-carbonic maceration depending on the vintage. It features vibrant aromas of fresh plums and Japanese apricot, electric acidity, gentle skin-contact tannins, and a savory umami finish. Bottled unfiltered and with zero added sulfites.

Beginner's Note

Don't be put off by its sharp acidity! This natural wine is incredibly juicy, tasting like fresh plums and ume, and gets surprisingly smoother and more mellow the longer it stays open in the glass.

Sommelier's Note

"A true masterpiece of Japanese natural wine that overturns all preconceptions about Delaware. The brilliant tension between electric acidity and the rustic, skin-contact structure from foot-treading is a masterclass in unlocking Delaware's untapped potential. The dramatic evolution in the glass after opening—from sharp and energetic to mellow and umami-rich—is an experience every wine lover must discover."

Food Pairings

Pairs exceptionally well with lightly spiced Asian dishes, grilled poultry, and traditional Japanese cuisine. The wine's electric acidity cuts through rich fats, while its subtle bitterness from stem contact complements savory, umami-rich sauces. Excellent with yakitori (salt), simmered dishes with dashi broth, grilled eggplant with ginger soy sauce, and herb-accented ethnic salads.

When to drink it

Perfect for casual weekend dinners with friends, outdoor summer picnics, or when you want to surprise wine lovers with a unique Japanese natural wine. Great as an aperitif or paired with a full meal.
