Sauvignon Blanc Ice is Swiss Village Winery's rare and luxurious ice wine, made from 100% Sauvignon Blanc grown in the Aokihara district of Ikeda-machi, Nagano Prefecture — the same vineyard area behind the winery's dry Sauvignon Blanc deuxième and Premier Aokihara bottlings. The harvested grapes are frozen and then naturally thawed, so that only the concentrated, unfrozen juice is fermented, concentrating sugar and acidity into an intensely sweet dessert wine. It shows a honey-like richness balanced by bright, refreshing acidity, finishing extremely sweet. Bottled in a 375ml half-bottle at 15% ABV, it is best served chilled around 10°C in small pours.

Sommelier's Note

True ice wine made in Japan is exceptionally rare — this bottling's freeze-concentration method delivers a honeyed intensity that easily rivals imported dessert wines several times its price.

New to wine?

A rare Japanese ice wine with concentrated honey-like sweetness — an easy way to experience dessert wine even if you don't usually drink sweet wines.

Food Pairings

Its honeyed sweetness and bright acidity pair beautifully with blue cheese, foie gras, and fruit tarts. It also works well alongside Japanese sweets such as anmitsu or dorayaki, where its concentrated fruit character complements red bean and mochi textures.

When to drink it

Special celebrations, after-dinner dessert pairing, or as a distinctive gift bottle from Nagano.
