Sinano Wine's serious, bottle-fermented sparkling white, made from 100% Niagara grapes grown in the winery's own and contracted vineyards in Kikyogahara, Shiojiri, Nagano. Produced by genuine methode traditionnelle (the Champagne method), where a slow secondary fermentation takes place directly inside the bottle. Left unfiltered and without disgorgement, it retains the lees and yeast character built up during that second fermentation, giving the wine a hazy, textured appearance and a savory depth uncommon among Japanese Niagara wines. Dry in style, it channels Niagara's showy, floral-grapey aroma into a fine, persistent mousse balanced by crisp acidity — the white-grape counterpart to Sinano's Concord sparkling.
