A vivid, chillable red made from 100% Concord grapes grown in Shiojiri's Kikyogahara basin, produced using maceration carbonique — the same whole-cluster, carbon-dioxide-sealed fermentation method famous from Beaujolais Nouveau. Uncrushed clusters are sealed in tank under CO2 for several days, which triggers intracellular fermentation, drawing out fruity aromas while keeping tannins soft and gentle. The result is a light-bodied, dry red with moderate acidity and low tannin, best enjoyed served lightly chilled.
Proof that Concord doesn't need to be sweet: maceration carbonique turns Shiojiri's native grape into a dry, chillable red that rivals Beaujolais Nouveau for effortless drinkability.
