OTATE WINE! is OSA WINERY's Otaru-exclusive white wine, created in partnership with the official 'Otate' branded-scallop promotion project to pair with Otaru's local scallops, now in its fifth vintage. Blending 86% Delaware, 7% Chardonnay, 5% Tabiji (a rare Otaru-native grape) and 2% Pinot Gris — a similar varietal makeup to the winery's flagship 'O' — the wine was tuned by tasting it repeatedly against butter-soy-sauce grilled scallop, the classic way to prepare 'Otate', with the blend ratio refined slightly each year from a sommelier's perspective. It shows a pale, clear gold color with aromas of lemon, grapefruit and apple alongside chamomile and honey nuances, leading into a fresh, fruit-forward, off-dry palate with a soft attack and round acidity, its light tannic grip tightening the finish. Sold only at the winery shop and select retailers within Otaru city, it is released without a capsule seal as a nod to protecting the sea that sustains the scallops. The 2025 vintage yielded just 387 bottles.
