O is OSA WINERY's flagship white wine, now in its tenth vintage. Grown in Yoichi and Otaru, Hokkaido, it blends contracted-grower Delaware with the rare Otaru-native Tabiji grape and a portion of estate-grown Chardonnay, after tasting ten trial blending ratios against food (earlier vintages used Pinot Gris instead of Chardonnay). The wine shows a pale straw color with aromas of yellow peach, honeyed apple, ripe Japanese citrus such as iyokan and hassaku, honey, and cotton candy, leading into a soft, off-dry palate with light bitterness and a graceful finish. About 3,000 bottles were released in July 2025. The name reflects the winery's 'dosanco bianco' sub-theme: an everyday Hokkaido white built purely to make food taste even better.

Terroir & Winemaking

Delaware and Tabiji grapes from contracted Yoichi growers are blended with a portion of estate-grown Otaru Chardonnay. Grapes are hand-sorted by sight and smell immediately after harvest with the help of volunteers, then fermented separately by harvest date, vineyard, and variety in small tanks before the base wines are blended the following spring to balance the cuvée without adjusting sugar or acidity.
