Faraday is a dry rosé from Natan Winery made with grapes grown by contract farm 'Shiroi no Mi Farm' in Mitoyo City, Kagawa Prefecture, a sunny stretch of land near the Seto Inland Sea. The current (2024) vintage blends Pione, Shine Muscat, Fujiminori and Kyoho with two rarer Japanese-bred and wild varieties: Mondo Burie (a Chardonnay × Cayuga White cross bred for white winemaking) and Ryukyu Ganebu, a wild Vitis ficifolia var. ganebu grape native to Okinawa's Ryukyu Islands. Fermented with wild yeast, bottled without added sulfites or filtration, it pours a pale, softly hazy purple and opens with cotton-candy and stewed-plum aromatics. The entry is gentle and fruit-forward, turning toward calm fresh-herb notes with air; as it warms, gentle bitterness and umami build layer by layer, deepening further on day two and three. Grape composition and ratios shift each vintage (earlier releases used a narrower blend), so this profile reflects the 2024 bottling.
