DEEPER DEEPER is a barrel-aged natural red from Natan Winery in Miyoshi City, Tokushima, blending Yama Sauvignon (approx. 65%) and Campbell Early (approx. 35%) grapes sourced from Iwate Prefecture. The two varieties are co-destemmed and crushed into an open-top tank, hand-plunged for two weeks to draw out color and aroma, then pressed and aged roughly eight months in French oak before bottling, followed by about a year of cellar rest. Fermented with wild yeast and bottled without added sulfites, fining, or filtration, it pours a faintly orange-tinged raspberry-red and opens with a rich, brown-sugar-plum nose layered with cinnamon and cumin spice, leading into a palate gripped by bright acidity, ripe-plum fruit, and a cocoa-like depth that lingers through a long, complex finish. Winemaker Namika Inoshita named the wine for the pull of being drawn ever deeper by wine itself — a charming aroma invites you in, fresh red fruit bursts in the mouth, and a wild, woodsy complexity follows. (Currently available as the 2022 vintage.)
