Baibai is Natan Winery's signature annually-released cuvée, a blend of Delaware (approx. 74%) and Muscat Bailey A (approx. 26%) sourced from Yamagata Prefecture. Delaware is vinified in an orange-wine (skin-contact) style while Muscat Bailey A contributes deep red color, giving the wine its reddish-orange hue and the retail category of 'orange-rosé' — it carries both the texture of an orange wine and the brightness of a rosé. The name evokes 'goodbye' and the emotional colors of sunset (夕焼け小焼け); each vintage's back-label poem reflects that year's mood. Fermented and bottled by winemaker Namika Inoshita without added sulfites, fining, or filtration, it shows aromas of quince and acerola with fresh acidity and layered fruit depth.
