Kamoshika Wine is Fattoria AL FIORE's tribute to Kawasaki-machi, the small Miyagi Prefecture town that welcomed the winery's founders — outsiders with no local history of fruit farming — and let them build their winery inside the gymnasium of a former elementary school. Named after the kamoshika (Japanese serow), the town's official animal, with a nod to the Japanese verb kamosu ("to brew"), the wine is made from the same 100% Steuben grapes sourced from the Aomori Grape Growers' Cooperative that go into the winery's Piacere! bottling. While Piacere! uses only the free-run juice released when destemmed berries crush under their own weight, Kamoshika Wine is built mainly from the remaining press-run juice, giving it a touch more structure and restrained tannin alongside Steuben's fresh, gentle acidity. The label was hand-drawn by Maki Sato, a Kawasaki-machi mother of two. The winery's long-term goal is to eventually make this wine entirely from grapes grown within Kawasaki-machi itself.

Where Piacere! is fermented solely from the free-run juice released when destemmed berries crush under their own weight in tank, Kamoshika Wine is built primarily from the remaining press-run juice, yielding a touch more color and structure. ABV 11.5%, roughly 1,997 bottles produced.
