Cavallotto's flagship Barolo, sourced entirely from the family's monopole Bricco Boschis vineyard in Castiglione Falletto, certified organic since 1976. Fermented with indigenous yeasts and macerated on the skins for roughly 20-35 days, the wine ages for around 3 to 3.5 years in large Slavonian oak botti before further bottle aging. The result is a classic, traditionally styled Barolo showing cherry, raspberry and plum fruit shaded by earth, menthol and tar, with firm but polished tannins that balance power and elegance.
