Vin Santo del Chianti Classico Baruffo
ヴィンサント・デル・キャンティ・クラシコ「バルッフォ」
Cantalici
Trebbiano Toscano · Malvasia del Chianti
About this wine
Cantalici's Vin Santo del Chianti Classico DOC, labeled Baruffo, is the estate's traditional Tuscan dessert wine. As required by the appellation, it is based predominantly on Trebbiano Toscano and Malvasia (together at least 70% of the blend), with the grapes dried before slow fermentation and extended barrel ageing in small sealed casks (caratelli), producing an amber-hued wine with notes of dried fruit, honey, and nuts.
A classic introduction to Tuscan dessert wine — sip it slowly with something crunchy and sweet.
Sommelier's Note
"This Vin Santo is a reminder that Cantalici's craftsmanship extends well beyond Sangiovese — a patiently made, luxuriously concentrated dessert wine worth the wait."
Food Pairings
The classic match is Tuscan cantucci almond biscotti for dipping, but it also pairs beautifully with aged pecorino, foie gras, and dried fruit and nut desserts.

キャンティ・クラシコ・リゼルヴァ「バルッフォ」
Chianti Classico Riserva Baruffo
RedSangiovese
Baruffo is one of Cantalici's two single-vineyard Chianti Classico Riserva DOCG bottlings, predominantly Sangiovese (Chianti Classico Riserva regulations require a minimum of 80% Sangiovese). It is aged for around 18 months, roughly 70% in 20-hectoliter French oak barrels and 30% in stainless steel, producing a deep, structured red with notes of dark berries, spice, and sweet tobacco.
キャンティ・クラシコ・リゼルヴァ「メッセル・リドルフォ」
Chianti Classico Riserva Messer Ridolfo
RedSangiovese
Named after Messer Ridolfo Zati, the 16th-century owner of the furnace (L'Antica Fornace di Ridolfo) around which Cantalici's cellar is built, this is the estate's second single-vineyard Chianti Classico Riserva DOCG. Made from 100% Sangiovese grown at around 350 meters above sea level with southwest exposure, it is aged approximately 18 months, roughly 70% in 20-hectoliter French oak barrels and 30% in stainless steel.
キャンティ・クラシコ・グラン・セレツィオーネ
Chianti Classico Gran Selezione
RedSangiovese
Cantalici's top-tier Chianti Classico Gran Selezione DOCG is made from Sangiovese hand-harvested in crates from the estate's oldest vineyards. Fermentation uses autochthonous yeasts in stainless steel with an extended 28-30 day skin maceration, producing an intense, full-bodied wine with notes of dried plum, forest berries, spice, tobacco, and vanilla.
ペターリ ロザート
Petali Rosato
RoséSangiovese
Petali is Cantalici's Toscana IGT rosato, made from 100% Sangiovese vinified entirely in stainless steel to preserve freshness. After a brief cold skin maceration of only a few hours, the wine ferments at low temperature, resulting in a bright coral-pink rosé with aromas of raspberry, wild strawberry, and delicate floral notes.
ペターリ ロッソ
Petali Rosso
RedSangiovese
The red counterpart to Cantalici's Petali rosato, this Toscana IGT rosso is made from Sangiovese fermented in stainless steel at controlled temperature with a shorter 7-10 day skin maceration, producing a lighter-bodied, transparent ruby red with morello cherry, spice, and vanilla notes.
