Levia is Caccia al Piano's Toscana IGT rosato, a blend of Merlot and Syrah named for the color of a Bolgheri sunset. Merlot undergoes a gentle whole-cluster pressing while Syrah is de-stemmed and given a 6-8 hour pre-pressing skin maceration; both then ferment slowly at low temperature over 15-20 days before four months of maturation on the lees with periodic bâtonnage, entirely in stainless steel. The result is a fresh, fruit-forward rosé with a characteristic salty finish.
