About this wine
CaP Rosé is Caccia al Piano's Metodo Classico sparkling rosé — the first traditional-method sparkling wine ever produced in the municipality of Castagneto Carducci. A 50/50 blend of Syrah and Merlot, the two varieties are harvested and vinified separately, then very gently pressed to a low must yield (around 40%) to preserve elegance, aromatic purity, and acidity before undergoing secondary fermentation in bottle. The wine is a tribute to founder Franco Ziliani, the Franciacorta pioneer who brought Metodo Classico expertise to Bolgheri.

The wine matures about a year in French oak barrels of varying toast levels, followed by an assemblage and a further 12 months of oak rest before bottling.
