Cabutto's top Riserva, produced only in exceptional vintages and dedicated to company founder Domenico Cabutto. Made from a careful selection of the best, most mature Nebbiolo grapes from the estate's old vines in the historic Sarmassa cru. Vinified with extended skin maceration and aged for at least four years in Slavonian oak casks, followed by a minimum of twelve months of bottle aging before release. The wine shows an intense, transparent garnet color and a complex bouquet of dried rose, violet, raspberry and wild strawberry in youth, evolving toward jam, nutmeg, black pepper, truffle, licorice, leather, smoke and tar with age; the palate is robust and austere with firm tannin and notable longevity.

Cabutto's flagship traditional Barolo, blended from Nebbiolo grown on the estate's La Volta vineyards spanning the communes of Barolo, La Morra and Novello. Vinified with a long 25-30 day maceration on the skins and aged for roughly three years, mostly in medium and large Slavonian oak botti, before bottling unfiltered. Young vintages show bright red cherry, citrus peel and subtle spice; with age the wine develops tar, dried rose petal, leather and licorice, retaining Nebbiolo's signature firm tannin and bright acidity.
