Barolo Riserva del Fondatore Vigna Sarmassa

バローロ リゼルヴァ・デル・フォンダトーレ ヴィーニャ・サルマッサ

Cabutto

Nebbiolo

About this wine

Cabutto's top Riserva, produced only in exceptional vintages and dedicated to company founder Domenico Cabutto. Made from a careful selection of the best, most mature Nebbiolo grapes from the estate's old vines in the historic Sarmassa cru. Vinified with extended skin maceration and aged for at least four years in Slavonian oak casks, followed by a minimum of twelve months of bottle aging before release. The wine shows an intense, transparent garnet color and a complex bouquet of dried rose, violet, raspberry and wild strawberry in youth, evolving toward jam, nutmeg, black pepper, truffle, licorice, leather, smoke and tar with age; the palate is robust and austere with firm tannin and notable longevity.

Beginner's Note

A serious, age-worthy Riserva — best appreciated by those already familiar with traditional Barolo.

Sommelier's Note

"Made only in the greatest years, from the oldest vines in Sarmassa — this is Cabutto's statement wine, built to last decades."

Food Pairings

Best suited to slow-braised game, roasted venison, and truffle-based dishes; its structure also complements long-aged hard cheeses.
