Terroir & Winemaking
100% Pinot Nero, hand-harvested very early (last two weeks of August), gently pressed under dry-ice protection with static must decanting. Aged 4 months in barrique before tirage; secondary fermentation lasts 20-25 days at 16°C in the traditional Metodo Classico process, with zero dosage (no sweetening) at disgorgement.
