Domaine de la Borde
Domaine de la Borde was founded in 2003 by Julien Mareschal in the hilltop village of Pupillin, the historic heart of Jura's natural wine movement, near the cellars of Pierre Overnoy and Emmanuel Houillon whose influence shaped his approach. Farming just 5 hectares of steep slopes composed of blue clay, red Triassic marl and limestone (300-550m elevation), the estate has been organically certified since around 2011-2012, with biodynamic practices trialed since 2009. Fermentations are entirely spontaneous with indigenous yeasts, wines are typically unfined, unfiltered and made with minimal or no added sulfur. The domaine works native Jura varieties -- Chardonnay, Savagnin, Trousseau, Pinot Noir and Ploussard (Poulsard) -- including traditional ouillé and oxidative (Vin Jaune) styles, all bottled under the Arbois-Pupillin appellation.

Domaine de la Renardière
Founded in 1990 by Jean-Michel and Laurence Petit in the village of Pupillin — the spiritual home of the Ploussard grape — Domaine de la Renardière has grown from a single rented hectare into a 7-hectare estate now supported by their son Léo. Farmed organically since 2010 (certified in 2012) and guided by biodynamic principles inspired by the teachings of Pierre Masson, though without formal certification, the domaine vinifies each parcel separately to reveal how Pupillin's red and grey marl soils shape the wines. Chardonnay and Savagnin lead the whites, while Ploussard and Trousseau anchor the reds, alongside vin jaune, vin de paille, Macvin, and natural sparkling cuvées. Domaine du Pélican
Domaine du Pélican is a leading biodynamic estate in Arbois, Jura, founded in 2012 by Guillaume d'Angerville — fifth-generation proprietor of the celebrated Burgundy domaine Marquis d'Angerville in Volnay — together with his longtime régisseur François Duvivier. The project began after d'Angerville was served a Jura Chardonnay blind and mistook it for white Burgundy, sparking a search for vineyards in the region. The estate now farms 15 hectares across Arbois and Montigny-lès-Arsures, including parcels acquired from the legendary Jacques Puffeney, and has been certified biodynamic since 2017. Chardonnay, Savagnin, Pinot Noir, Trousseau and Poulsard are vinified with Burgundian precision, producing wines of remarkable purity and mineral tension. The domaine takes its name from the pelican on the town crest of Arbois.

Fruitière Vinicole de Pupillin
Founded in February 1909 by 33 winegrowers who pooled resources during a period of overproduction and economic hardship, Fruitière Vinicole de Pupillin is one of the oldest wine cooperatives still active in the Jura. Based in Pupillin — celebrated as the 'world capital of Ploussard' — the cooperative today unites around 35 to 40 grower families cultivating roughly 65 hectares of vines. It produces wines across the Arbois-Pupillin, Arbois, and Côtes du Jura appellations, plus Crémant du Jura, Macvin, and vin de paille, using the Jura's signature grapes: Ploussard, Savagnin, Trousseau, Chardonnay, and Pinot Noir.
