Memuro Winery (Memuro-cho, Tokachi, Hokkaido) is a community-rooted winery born from the dreams of local arable farmers in Memuro Town — a region traditionally known for potato, sugar beet, and wheat cultivation. Founded in 2020 with a brewing license obtained on October 1, 2020, the winery is located within the Shin-Arashiyama Sky Park public facility as part of a public-private partnership initiative led by Memuro Town. The winery's signature philosophy is 'wine for every field' (畑ごとのワインづくり): each grape grower's harvest is fermented and bottled separately, expressing the unique character of individual vineyards. The winery focuses on cold-hardy varieties suited to Tokachi's harsh winters, led by Yamasachi (山幸) — a Tokachi-born hybrid of Vitis amurensis and Kiyomi registered with the International Organisation of Vine and Wine (OIV) in 2020 as Japan's third OIV-certified indigenous variety — as well as Kiyomi (清舞). Using Asia's first high-performance destemmer and rigorous scientific quality management, Memuro Winery pursues wines that speak purely of Tokachi terroir. Representative: Koichi Bito (尾藤光一). In June 2025, the winery received the JAL Award at the 8th Japan Winery Award (JWA) 2025, recognizing it as one of three next-generation wineries expected to contribute to the future of Japanese wine and tourism.

Misono Vineyard was founded in 2019 by Muneo Matsumura—a former wine bar owner who specialized in Burgundy and Champagne—on 6 hectares of east-facing hillside in Yoichi, Hokkaido, overlooking Ishikari Bay. Matsumura studied viticulture at the Chikumagawa Wine Academy in Nagano before establishing the vineyard. The winery received its license in 2021, becoming the 15th winery in Yoichi. Pinot Noir, Chardonnay, and Albariño are the estate's primary plantings, joined by heritage Delaware and Niagara vines (30–50 years old) inherited from the previous orchard owner. All wines are made without added sugar, acid, or fermentation aids, using wild yeast and remaining unfiltered. Misono Vineyard co-hosts tasting events with neighboring 10R Winery.

Nakazawa Vineyard was established in 2002 by Kazuyuki and Yukiko Nakazawa in the Kurisawa district of Iwamizawa, Hokkaido — two former office workers who made the leap to viticulture from scratch. On a gently south-facing 2.7-hectare plot they cultivate around 15 grape varieties including Gewürztraminer, Pinot Gris, Kerner, Silvaner, and Pinot Noir, using organic inputs and wild-yeast fermentation to let the land speak. From 2002–2012 they entrusted their grapes to Coco Farm Winery in Tochigi, whose winemaking team produced the first incarnations of the celebrated Kurisawa Blanc. In 2013 they shifted entirely to 10R Winery — founded by Bruce Gutlove, Coco Farm's former head winemaker — located in the same Kurisawa township. In 2017 the Nakazawas co-founded Kurisawa Wines together with neighbouring grower KONDO Vineyard (Ryosuke and Takumi Kondo), creating a joint label that now stands as one of Hokkaido's most sought-after natural wine projects. Production is intentionally tiny; bottles are considered rare collector items.
