Despite its deep purple-black skin, Black Olympia — a table-grape variety related to Muscat — is gently pressed to produce a pale, aromatic white wine rather than a red. The winery ferments at low temperatures and bottles without heat pasteurization, preserving the grape's delicate floral aroma and soft acidity.
