Koshu is Sawa Wines' dry white made from 100% Koshu grapes grown in the winery's own Yachimata, Chiba vineyards. Fermented and bottled in-house, it is only lightly sheet-filtered rather than fine-filtered, so some natural sediment may remain. The result is a crisp, refreshing white with citrus-driven acidity layered with notes of honey and grapefruit.

Sommelier's Note

Chiba is not Yamanashi, but Sawa Wines' Koshu proves the variety's citrusy, honeyed character travels well beyond its home prefecture — a small-production white worth seeking out.
