A traditional-method sparkling wine from Iwanohara Vineyard's Zenbei Premium series, made 100% from Rose Shioter, the white grape variety bred by Zenbei Kawakami in 1927 (a Bailey x Chasselas Siota cross). Produced entirely by hand, from bottle fermentation through label application, using the same in-bottle secondary fermentation method (méthode traditionnelle) as Champagne. It shows elegant citrus aromas with a hint of pineapple, crisp acidity, and a fine, persistent mousse.

Sommelier's Note

One of the few Japanese sparkling wines made by true traditional-method bottle fermentation from a 100% indigenous Kawakami-bred variety — Rose Shioter's citrus-and-pineapple perfume gives it real identity beyond the usual Koshu or Muscat Bailey A sparklers.

Terroir & Winemaking

Rose Shioter grapes (100%, estate-grown by Iwanohara Vineyard) are vinified as a base wine, then undergo secondary fermentation in the bottle in the traditional Champagne method, with all riddling, disgorgement, and labeling done by hand. ABV 12%. Dry. Cork closure. Best served at 6-8°C.
