Hokkaido 100 Pinot Noir is a GI Hokkaido-certified red wine from Hakodate Winery, made from 100% Pinot Noir grapes grown at contract vineyards in Yoichi, Hokkaido — the same cool-climate site that supplies the winery's Hokkaido 100 Pinot Noir Rosé. Unlike the rosé, which uses limited skin contact for a lighter, citrus-driven style, this red undergoes full maceration (1-2 days of cold soak followed by warmer fermentation with pigeage) to extract deeper color, tannin and structure, then rests in bottle to soften. It shows a pale ruby hue with charming strawberry and raspberry aromas, refined red-fruit flavors, soft well-integrated tannins and bright acidity, positioning it in the premium tier of the Hokkaido 100 lineup alongside the winery's Merlot. Bottled at 750ml with a cork closure.

Grapes are harvested in mid-October from contract vineyards in Yoichi, Hokkaido, where growers have cultivated wine varieties for over 35 years — the same source as the Hokkaido 100 Pinot Noir Rosé. Vinified with 1-2 days of cold maceration, fermentation at elevated temperature with pigeage for extraction, and careful oxidation control during malolactic fermentation and storage. Primarily bottle-aged to soften tannins. GI Hokkaido certified. ABV 12%. 750ml, cork closure, medium body, best served at 14-16°C.
