Hakodate, located in the southern tip of Hokkaido, is an emerging wine region shaped by a cool maritime climate influenced by the Tsugaru Strait. Milder winters and cool summers than much of Hokkaido make it ideal for cool-climate varieties such as Chardonnay, Kerner, Pinot Noir, Müller-Thurgau, Campbell Early, and Niagara. The region gained international attention when Burgundy's Domaine de Montille established Japan's first foreign-owned vineyard here in 2019, drawn by Hakodate's sunlight, soils, and gentle climate. Long-established Hakodate Wine (est. 1973) in neighboring Nanae-cho, Nanae, also produces acclaimed wines including the shibare-zukuri ice-wine style. The combination of rich seafood culture and rising boutique winery scene makes Hakodate a compelling destination for wine tourism in Japan.

Hakodate Winery
Hakodate Wine Co., Ltd. is one of Hokkaido's most established wineries, founded in 1973 in Nanae-cho, a town near Hakodate at the foot of Mt. Komagatake. The company's winemaking roots trace back to the 1930s, when Ohara Shoten (maker of the KoUP Gaarana soft drink) began fermenting wild mountain grapes near Mt. Komagatake; the fruit-wine division was later spun off as Komagatake Sake Brewery in 1973, and renamed Hakodate Wine Co., Ltd. in 1984. Now part of the Oenon Holdings group, Hakodate Wine produces a wide range of wines from cold-hardy varieties such as Kerner, Campbell Early, Niagara, Zweigelt, Merlot, Pinot Noir and Chardonnay, sourced from contracted growers in Yoichi and Niki as well as its own vineyards in Nanae. The winery is best known for its 'shibare-zukuri' technique, in which harvested grapes are naturally frozen in Hokkaido's cold air and pressed while frozen to concentrate sugars into rich dessert wines, and for a decades-long commitment to additive-free (no added sulfites) winemaking.

Nora-Kura
Nora-Kura is one of Hokkaido's first independent natural wine projects, founded in 2011 by husband-and-wife team Ken and Kazuko Sasaki in Hokuto City (adjacent to Hakodate). The Sasakis trained at legendary domaines in Burgundy and the Rhône — including Domaine Leflaive, Christian Binner, David Léclapart, and Chapoutier — before returning to Hokkaido with a clear vision: to grow grapes without chemicals and vinify them without interference. Their estate vineyard sits on a south-facing slope in the Bungetsu district, overlooking the nighttime panorama of Hakodate Bay. The approximately 3-hectare plot is planted primarily with Chardonnay and Pinot Noir. Nora-Kura enriches its soils with kombu kelp, rice bran, and lees — creating a biodiverse ecosystem rather than a monoculture. Wild yeast is used exclusively; sulfur additions are zero or trace. Production is around 13,000 bottles per year, split among three lines: the flagship Nora series (expressing the estate's core identity), the Norapon series (contract-grower wines celebrating Hokkaido's breadth), and the avant-garde Nora-Ken series (experimental micro-cuvées that push technique to its limit).

de Montille & Hokkaido
de Montille & Hokkaido is Japan's first foreign-owned vineyard project, launched in 2016 by Etienne de Montille — current owner of the legendary 300-year-old Domaine de Montille in Burgundy. After visiting Japanese wine regions and consulting meteorologists, geologists, and soil scientists from Burgundy University, Etienne chose Hakodate in southern Hokkaido for its cool climate, volcanic soils, low winter snowfall, and long summer sunshine hours closely resembling Burgundy. Vine planting began in the Kikyo district of Hakodate in 2019, with 7 hectares in operation and plans to expand to 25 hectares. Between 2018 and 2022, the project produced small quantities of wine from Yoichi-area growers in partnership with Coco Farm and Bruce Gutlove (10R Winery) under a five-vintage learning series — each labelled with a single kanji character reflecting the knowledge gained each year: 豪 (2018), 驚 (2019), 學 (2020), 理 (2021), 探 (2022). The first vintage from the estate vineyard was produced in 2023 (label: 望 Nozomi meaning hope), coinciding with completion of the Hakodate winery. The winery was inaugurated on 26 July 2024. The project gained Japan Winery Award 4-star recognition in 2025.
